From time to time, we'll post our recipe for the evening. Always a challenge keeping things fresh in an RV kitchen.
Tonight: Cheesy Ground Beef Macaroni Casserole
1 1/2 c Whole Wheat Elbow Macaroni
3/4 lb. ground beef
Worchestershire Sauce
Chopped onions
Minced garlic
4 strips cooked bacon (crumbled)
1 can Cheddar Cheese Soup
beer
Ketchup
1/4 cup Sour Cream
1/2 cup shredded cheese
Brown ground beef, onions and garlic with a splash of worchestershire sauce. (We do this outside on our grill with a griddle on it). At the same time, cook macaroni in microwave with about 2c water for 6 minutes, stirring every three minutes.
Combine all ingredients (except sour cream & shredded cheese) in electric skillet. Add beer and ketchup to give a “soupy” consistency. Stir.
Cover and turn to 350 degrees for 15 minutes. Stir in sour cream and shredded cheese. Cover and cook for 5 more minutes.
